Easy Chicken Enchiladas - cooking recipe

Ingredients
    2 c. cooked, chopped chicken
    2 c. sour cream
    1 c. cream of chicken soup
    2 c. shredded Monterey Jack cheese
    2 c. shredded Longhorn cheese
    1 (4 oz.) can chopped green chilies, drained
    2 Tbsp. chopped onion
    1/8 tsp. salt
    1/4 tsp. pepper
    10 (10-inch) flour tortillas
    vegetable oil
    1 c. shredded Longhorn cheese
Preparation
    Preheat oven to 350\u00b0.
    Combine first 9 ingredients.
    Fry tortillas, one at a time, in 2 tablespoons of oil, for 5 seconds on each side or until golden.
    Add oil as needed.
    Drain on paper towels.
