Virginia'S Zucchini Soup * - cooking recipe

Ingredients
    4 c. sliced zucchini (with skin on)
    1 1/2 qt. vegetable or chicken broth
    1/2 c. chopped onions
    1 c. skim milk or cream
    2 Tbsp. butter or oil
    1 tsp. basil
Preparation
    Saute onions; add zucchini, basil and stock.
    Simmer for 30 minutes.
    Remove from heat and blend in blender until smooth.
    Add milk and season to taste.
    Serve hot or cold.
    Yield:
    6 bowls.
