Green Tomato Relish - cooking recipe
Ingredients

1 peck green tomatoes, chopped
1 c. salt
1 1/2 large cabbage, chopped fine
6 green peppers, chopped
6 red peppers, chopped
9 onions, chopped
3 qt. vinegar
7 c. sugar
2 Tbsp. celery seed
2 Tbsp. mustard seed
1 stick cinnamon
1 Tbsp. whole cloves
1 Tbsp. turmeric
Preparation

Mix together green tomatoes, salt and cabbage.
Let stand overnight.
Drain well.
Add to the tomato mixture green peppers, red peppers, onions, vinegar and sugar.
Put the following spices in a cloth bag or a tea ball:
celery seed, mustard seed, cinnamon, whole cloves and turmeric.
Add spice bag to tomato mixture.
Cook until done.
Pour into hot jars.
Seal.
Makes 20 to 22 pints.
