Ingredients

1 c. tarragon vinegar
1/3 c. sugar
1/2 tsp. ground cloves
1/8 tsp. cinnamon
1/2 c. juice from can of beets
1/2 tsp. salt
1/8 tsp. allspice
Preparation

Mix and bring to boil and pour over can of red beets.
When beets have been used up cook a few carrots until about half done, slice lengthwise and drop in the spiced vinegar.
Let stand several hours.
