Huevos Rancheros(For 2 To 3) - cooking recipe

Ingredients
    4 slices bacon, cut into 1-inch strips
    1 Tbsp. oil
    1 small onion, sliced
    3 jalapenos, chopped *
    1 green pepper (optional)
    1/2 c. tomato sauce
    1/2 c. chopped tomatoes (1 medium)
    1 clove crushed garlic
    1 tsp. chili powder
    1/4 tsp. salt
    eggs
    buttered tortillas
    grated Parmesan or yellow cheese
Preparation
    Fry bacon.
    Drain and pour off fat.
    Saute onion, jalapenos and green pepper in oil.
    Add tomato sauce, tomatoes, garlic, chili powder and salt.
    Simmer 15 minutes.
    Thin as necessary with tomato juice or water.
    Break eggs into sauce.
    Simmer, covered until done.
    Serve on warm buttered tortillas.
    Top with grated cheese and bacon.
