Marinated Pasta Salad - cooking recipe

Ingredients
    2 (4 oz.) boneless chicken breasts, grilled and sliced
    3 c. cooked whole grain pasta
    1 small can artichokes, packed in water
    1 small can sliced black olives
    1 red bell pepper, roasted, peeled and chopped
    1 yellow bell pepper, roasted, peeled and chopped
    1/4 c. sun-dried tomatoes
    2 Tbsp. toasted pine nuts
    3 Tbsp. olive oil
    2 Tbsp. vinegar, rice or pineapple
    Parmesan cheese
Preparation
    Mix all ingredients except cheese and let marinate for at least 3 hours. Add a little more olive oil and vinegar, if desired before serving. Add Parmesan cheese and serve. Serves 2.
