Hash Brown Casserole - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    2 lb. frozen hash browns
    1 onion, chopped
    1 bell pepper, chopped
    1 to 2 c. cubed ham
    10 eggs, beaten
    salt and pepper
    1 c. Cheddar cheese, shredded
Preparation
    Heat oil in large skillet.
    Add hash browns, onion and green pepper.
    Cook until potatoes begin to brown.
    Spray a 9 x 13-inch baking dish with cooking spray.
    Spread potato mixture in pan. Top with ham.
    Pour eggs over all ingredients; season with salt and pepper.
    Gently stir to coat all ingredients with egg. Sprinkle with cheese.
    Cover with foil; refrigerate overnight.
