Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1/2 lb. bread crumbs
    1 small can evaporated milk
    1/4 c. chopped onion
    1/4 c. chopped pepper
    1/4 c. chopped celery
    1/2 c. oleo
    dash of salt
    2 eggs, slightly beaten
    pepper to taste
    sage to taste
    1 tsp. pimento
    dash of Accent
Preparation
    Peel, slice and soak eggplant in salt water overnight; drain well.
    Soak bread crumbs in evaporated milk.
    Saute remaining ingredients.
    Combine all ingredients and pour into a casserole dish.
    Top with grated Cheddar cheese.
    Bake at 350\u00b0 until done.
