Scalloped Eggplant - cooking recipe
Ingredients

1 large eggplant
2 or 3 onions, diced
1 c. diced celery
1 c. diced green pepper
1/4 lb. butter
1/2 lb. cheese, grated (Swiss or Cheddar)
1/2 c. bread crumbs
2 eggs
salt and pepper
Preparation

Peel and cube eggplant; drop into boiling water.
Cook about ten minutes.
Drain, mash and set aside in glass bowl.
Saute chopped onions, green pepper and celery in butter for about 15 minutes.
Mix all together, reserving some cheese and crumbs to sprinkle on top.
Pour into greased baking dish; top with cheese and bread crumbs.
Bake at 375\u00b0 for 15 minutes, then 350\u00b0 for 15 minutes.
