Rich Whipped Potatoes - cooking recipe

Ingredients
    2 1/2 lb. medium size gold potatoes
    1/2 tsp. salt
    3 Tbsp. butter
    1 c. heavy cream
    1/4 tsp. black pepper
    1/4 c. chopped, fresh flat-leaf Italian parsley
Preparation
    Peel potatoes and cut in eights. Place potatoes in large pot with enough salted cold water to cover potatoes. Bring to boil over high heat; reduce heat to medium. Cook for 25 to 30 minutes or until fork tender; drain potatoes. Return potatoes to pot; cook over low heat for 1 minute to dry out. Remove from heat. Heat cream and butter in small saucepan until butter melts; add salt and pepper. Add cream mixture to potatoes. Beat with mixture until fluffy, about 2 minutes; stir in parsley.
