Marinade For Venison - cooking recipe

Ingredients
    2 1/2 c. red wine
    1 1/2 c. vinegar
    1 tsp. salt
    1 tsp. dry mustard
    2 bay leaves
    10 whole peppercorns
    10 whole cloves
    1 large thin sliced onion
    1 tsp. chopped celery
Preparation
    Combine all ingredients, mixing well.
    Place venison in enamel or earthenware bowl.
    Pour marinade over it.
    Cover with cheesecloth.
    Let stand at least 24 hours or up to 4 days in a cool but not refrigerated temperature.
    Turn meat often to thoroughly marinate.
    Cook the meat in the marinade, or roast it and use marinade for gravy.
