Potato And Blue Cheese Salad - cooking recipe
Ingredients

2/3 c. olive oil
1/3 c. apple cider vinegar
1/4 c. minced shallots
1 Tbsp. chopped fresh parsley
1 Tbsp. and 1/4 c. chopped fresh chives
1 Tbsp. coarse grained Dijon mustard
2 tsp. honey
2 tsp. grated lemon peel
3 lb. small red-skinned potatoes, quartered
12 romaine lettuce leaves
8 slices bacon, cooked until crispy, crumbled
1/2 c. crumbled Blue cheese (2 1/2 oz.)
1 hard-boiled egg, grated
1/4 c. chives
Preparation

Cook potatoes until tender. Drain. Add to dressing and toss.
