Mincemeat Salad - cooking recipe

Ingredients
    3 oz. orange gelatin (I use diet)
    1/2 c. celery
    1/2 c. pecans, chopped
    grated rind of 1 lemon
    1 unpared apple, diced
    1 c. orange juice, heated to boiling
    8 oz. crushed pineapple, undrained
    1 1/2 c. mincemeat (see note)
Preparation
    Dissolve gelatin in orange juice.
    Cool slightly.
    Add other ingredients and refrigerate.
