Rice Casserole - cooking recipe
Ingredients

1 c. chopped celery
1 c. chopped onion
1 Tbsp. butter
1 c. tomato juice
1/2 c. tomato paste
1 lb. ground beef
1 tsp. salt
1/2 tsp. Italian seasoning
1/4 tsp. pepper
1 c. brown rice, cooked
1/4 c. Parmesan cheese
1/2 c. grated Cheddar cheese
Preparation

Saute celery and onion in butter in small skillet until golden brown.
Cook, covered, until tender.
Stir in tomato juice and tomato paste.
Simmer for about 10 minutes.
Brown ground beef with seasoning in skillet, stirring until crumbly.
Stir in vegetable mixture.
Layer hot rice and ground beef mixture in casserole dish.
Sprinkle cheese on top.
Bake at 350\u00b0 for 10 to 15 minutes until cheese is melted.
