Sour Cream Banana Cake - cooking recipe

1/4 c. shortening
1 1/3 c. sugar
3 eggs
2 c. plus 1 Tbsp. plain flour
1 tsp. vanilla
1 tsp. baking powder
1 tsp. soda
3/4 tsp. salt
1 c. sour cream
1 c. mashed bananas
1/2 c. chopped pecans
Preparation

Cream
shortening and sugar until fluffy.
Add eggs and vanilla,
blending
thoroughly.
Combine flour, baking powder, soda and
salt;
add to creamed mixture, alternately with sour cream, beginning and ending with dry ingredients.
Add bananas and pecans,
mixing
until
well blended.
Spoon batter into a greased and floured
13 x 9 x 2-inch pan.
Bake at 350\u00b0 for 40 to 45 minutes.
Cool and frost with cream cheese frosting.
