Shrimp Fried Rice - cooking recipe

Ingredients
    2 c. chopped cooked shrimp
    4 c. boiled rice
    1/4 c. oil
    2 eggs, lightly beaten
    2 Tbsp. soy sauce
    1 tsp. salt
    freshly ground black pepper
    3 scallions, chopped
Preparation
    Fry shrimp in oil in deep frying pan for 1 minute, stirring constantly. Add eggs, salt and pepper. Fry over medium for 5 minutes, stirring constantly. Add the rice and soy sauce.
    Fry 5 minutes, stirring frequently. Garnish with chopped scallions. Serves 6.
