Zucchini Quiche - cooking recipe
Ingredients

1 (9-inch) pie shell
1 lb. zucchini
1 Tbsp. margarine
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. oregano
2 c. sour cream
2 large eggs
1/2 tsp. baking powder
3/4 c. shredded Cheddar cheese
1/4 c. Parmesan cheese, grated
Italian bread crumbs
1 1/2 Tbsp. chives, dried
Preparation

Bake crust about 3 minutes.
Cut zucchini into slices.
Saute in margarine with chives, salt, pepper and oregano.
Combine sour cream, eggs and baking powder; mix well.
Combine zucchini mixture and cheese.
Place in partially cooked pie shell.
Top with Parmesan cheese and sprinkle generously with bread crumbs.
Bake at 325\u00b0 for 40 to 45 minutes.
