Zucchini Stuffed Tomatoes - cooking recipe

Ingredients
    2 tomatoes
    1 tsp. minced shallots or green onions
    1 tsp. minced garlic
    1 Tbsp. lemon juice
    1 Tbsp. chopped parsley
    salt and pepper to taste
    1 zucchini, shredded
Preparation
    Slice small portion off bottom of each tomato; scoop out pulp. Saute rest of ingredients until done.
    Stuff into tomatoes. Place tops back on tomatoes.
    Bake at 350\u00b0 for 30 minutes.
