Stuffed Pepper Pie - cooking recipe

Ingredients
    2 qt. water
    3 medium green bell peppers, halved and seeded
    1/4 c. finely chopped onion
    1 c. water
    2 Tbsp. margarine or butter
    1 1/3 c. Hungry Jack instant potato flakes
    1/4 c. milk
    1 egg, slightly beaten
    1 lb. cooked bulk pork sausage, cooked and drained
    1 tomato, cut in wedges
    4 oz. shredded Mozzarella cheese
Preparation
    In large saucepan, bring 2 quarts water to rolling boil.
    Place peppers in boiling water and cook for 15 minutes.
    Drain; arrange, cut side up, around bottom of ungreased pie pan.
    Heat oven to 350\u00b0.
    In same saucepan, combine 1 cup water and margarine.
    Heat to boiling.
    Remove from heat; stir in potato flakes, milk and egg. Mix well.
    Stir in sausage; spoon into pepper lined pan.
    Arrange tomato wedges on top.
    Sprinkle with cheese and bake at 350\u00b0 for 15 to 20 minutes.
    Serves 6.
