Ingredients

1 (8 oz.) can crushed pineapple and juice
1/2 c. coconut
2 c. flour
1 c. sugar
1/2 c. brown sugar
1/2 c. vegetable oil
1 1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1/4 tsp. ground nutmeg
3 eggs
Preparation

Drain pineapple, reserving juice and add enough water to make 1 cup.
Grease and flour a 13 x 9 x 2-inch pan.
Add pineapple, coconut and juice to the other ingredients.
Beat on low speed for 1 minute.
Scrape bowl and beat two more minutes.
Pour in pan and bake in 350\u00b0 oven for 45 to 50 minutes.
Frost with vanilla frosting and sprinkle with 1/2 cup nuts.
