Mac And Cheese Casserole With Zucchini - cooking recipe

Ingredients
    1 (14 1/2 oz.) pkg. macaroni and cheese dinner or 2 small pkg.
    1 1/4 c. milk
    margarine or butter
    6 medium zucchini (2 lb.)
    1/2 lb. Jarlsberg or 1 (8 oz.) pkg. Mozzarella, shredded
Preparation
    About 45 minutes before serving, prepare macaroni and cheese, but use 1 1/4 cups milk and 4 tablespoons butter or margarine (1/2 stick).
    Slice zucchini into 1/4-inch slices.
    In skillet over medium high heat in 2 tablespoons hot margarine, cook zucchini in batches until golden brown.
    Remove to plate as they brown.
    Into 13 x 9-inch baking dish, spoon 1/2 macaroni and cheese and top with 1/2 zucchini.
    Repeat.
    Sprinkle with shredded cheese.
    Bake for 20 to 25 minutes at 350\u00b0 until cheese melts and is heated through. Yields 8 servings.
