Best Carrot Cake - cooking recipe

3 c. unsifted flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 lb. carrots, shredded (about 4 c.)
1 c. margarine, softened
4 eggs
2 Tbsp. grated lemon peel
2 Tbsp. grated orange peel
2 Tbsp. lemon juice
2 Tbsp. orange juice
1 c. chopped walnuts
1 c. raisins
1 c. brown sugar, packed
1 c. granulated white sugar
Preparation

Grease and flour a 10-inch tube pan.
Sift flour, baking powder, soda, cinnamon and salt; set aside.
Preheat oven to 350\u00b0. Beat the margarine, brown sugar and white sugar together.
Add eggs, one at a time; beat until light.
Combine juices and peels; add to creamed mixture.
Beat in flour mixture in quarters.
Fold in carrots, nuts and raisins.
Bake for 60 minutes, or until pick comes out clean.
Frost with cream cheese frosting, or dust with powdered sugar.
