Microwave Baked Butternut Squash - cooking recipe
Ingredients

1 butternut squash (about 2 lb.)
2 Tbsp. water
1/2 c. butter
1/2 tsp. salt
1/4 tsp. pepper
Preparation

Pare squash.
Cut in 1/2-inch thick slices and remove seeds. Arrange slices in a 2-quart glass baking dish.
Sprinkle water over squash and dot with butter.
Cook, covered, 10 to 12 minutes, stirring halfway through cooking time.
Add salt and pepper, stir to blend.
Rest, covered, 5 minutes before serving.
Yields 6 servings.
