Fish Chowder - cooking recipe

Ingredients
    1/2 c. salt pork, diced
    1/4 c. sliced onion
    3 c. sliced potatoes
    1 tsp. salt
    1/4 tsp. pepper
    1 c. water
    2 lb. lean fish
Preparation
    In a heavy kettle, fry pork to a golden brown color.
    Add onions and fry to a light yellow color.
    Add potatoes; sprinkle with salt and pepper.
    Add water; cook until potatoes are about half done.
    Add fish, flesh side down.
    Cook until potatoes are done (soft).
    Remove any skin from the fish and break the flesh into coarse flakes.
    Serve hot.
