Low-Fat Macaroni And Cheese - cooking recipe

Ingredients
    6 oz. macaroni
    1 Tbsp. margarine
    3 Tbsp. flour
    2 c. skimmed milk
    1/2 c. Parmesan cheese
    1 c. low-fat cottage cheese
Preparation
    Heat oven to 350\u00b0; cook macaroni and drain and rinse and set aside.
    Melt margarine in heavy saucepan over moderate heat; add flour and 1/4 cup of milk.
    Whisk until well blended.
    Add remaining milk and cook about 2 minutes; remove from heat and add all but 2 teaspoons Parmesan cheese.
    Stir into macaroni and salt to taste.
    Add cottage cheese and spoon into 8 x 8 x 2-inch pan. Sprinkle with remaining Parmesan cheese.
    Bake uncovered about 30 minutes.
