Chili Con Queso - cooking recipe

Ingredients
    1 large onion, minced
    4 Tbsp. butter
    4 oz. can green chilies
    2 Tbsp. flour
    salt
    2 lb. Jack cheese, cubed
    1 large clove garlic, minced fine
    1 lb. canned tomatoes, thoroughly drained
    1 c. cream or evaporated milk
    Tabasco to taste
    2 lb. Velveeta cheese
Preparation
    Cook onion and garlic in 2 tablespoons of butter until soft. Add tomatoes and simmer until thick.
    Add chilies.
    Make sauce with remaining butter, flour and cream.
    Add cheese, cut into 1-inch cubes (approximately).
    Cook until smooth and thick.
    Then add to tomato mixture.
    Season to taste with salt, pepper and Tabasco.
    Serve warm in chafing dish with chips.
