Ingredients

1 c. chunky peanut butter
1 c. vegetable shortening
1 c. granulated sugar
1 c. firmly packed light brown sugar
2 large eggs
1 tsp. vanilla extract
2 1/2 c. all-purpose flour
1/4 tsp. salt
Preparation

Preheat oven to 375\u00b0.
Combine everything together except flour and salt.
Beat with electric mixer on medium speed until smooth and creamy. Mix flour and salt together in small bowl.
Add flour mixture to peanut butter mixture, mixing continually.
Drop by 1-1/2 tsp. onto greased baking sheets. Flatten in a crisscross pattern with a fork dipped in granulated sugar.
Bake cookies until golden brown, 8 to 10 minutes.
Cool on baking sheets for two minutes.
Transfer to wire racks to cool completely.
