Skinny Hoppin' John - cooking recipe

Ingredients
    1 c. dried black-eyed peas
    1 can (about 14 oz.) seedless diced tomatoes, drained
    2 scallions (white and green parts), finely chopped
    1 rib celery, finely diced
    1/2 c. finely chopped white onion
    1 chili pepper
    1 tsp. fresh lime juice or to taste
    1/2 tsp. salt
    freshly ground pepper to taste
Preparation
    Rinse the peas and place them in a deep saucepan with 2 1/2 cups cold water. Bring to a boil, then reduce heat to a simmer. Cook until peas are almost soft, about an hour. Stir in tomatoes, scallions, celery, onion, chili pepper and salt. Simmer 25 minutes over medium heat. Mix in lime juice and season to taste with pepper.
