Bread Salad - cooking recipe

Ingredients
    2 stale pita bread
    2 green onions, chopped
    1 cucumber, sliced
    3 medium tomatoes, cut in wedges
    1/4 c. chopped parsley
    1 clove garlic, crushed
    1/4 c. olive oil
    1/4 c. lemon juice
    1 tsp. salt
    1/4 tsp. pepper
    1/4 c. chopped mint (optional)
Preparation
    Break the bread into small pieces and place in large bowl. Add other ingredients and mix well.
    Chill and serve as light lunch or as a salad.
