Shrimp And Crab Gumbo - cooking recipe

Ingredients
    3/4 c. oil
    3/4 c. flour
    1 small bell pepper, chopped
    1 large onion, chopped
    1 stalk celery, chopped
    4 c. water
    salt and black pepper to taste
    cayenne pepper to taste
    1 lb. shrimp, peeled and deveined
    1 lb. crab meat
    1/2 c. chopped parsley
    1/2 c. chopped green onion tops
Preparation
    Make a dark brown roux with oil and flour; add bell pepper, onion and celery and cook until onions are transparent.
    Gradually add the water and continue cooking for at least 1 hour.
    Adjust seasoning to taste; add shrimp, crab, parsley and green onion tops and simmer for 10 minutes.
    Serve over cooked rice in soup bowls. Yield:
    6 to 8 servings.
