Fried Rice - cooking recipe

Ingredients
    3 c. cooked, cool rice
    6 chopped green onions
    1 c. cooked chicken, beef, shrimp, etc.
    6 slices bacon
    3 or 4 eggs, beaten
    soy sauce
    peppers (if desired)
    1 c. chopped vegetable (broccoli, carrots, etc.)
Preparation
    Fry bacon until crisp in large skillet; drain, reserving 2 tablespoons fat.
    Cool and crumble bacon.
    Get skillet hot; pour in beaten eggs and stir in rice, onions, meat and vegetables. Cook until eggs are cooked, then cover and steam until vegetables are tender.
    Stir in bacon; add soy sauce until dark.
    Cook 5 more minutes and serve.
    We like it served on a bed of fresh lettuce.
