Surprise Muffins - cooking recipe
Ingredients

1 egg
1/2 c. milk
1/4 c. vegetable oil
1 1/2 c. all-purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
your favorite kind jelly
1 Tbsp. sugar
1/4 tsp. ground cinnamon
Preparation

Heat oven to 400\u00b0.
Grease the bottoms of 12 muffin cups with shortening or line with paper baking cups.
Beat egg, milk and oil in medium bowl with fork.
Mix flour, 1/2 cup sugar, baking powder and salt with other ingredients until moistened (batter should be lumpy).
Fill muffin cups 1/2 full.
Drop a teaspoon of jelly into the center of each muffin.
Add batter to fill muffin cups 2/3 full.
Bake 20 to 25 minutes or until golden brown.
Sprinkle a little sugar and cinnamon on top when out of oven.
Makes 12 muffins.
