Grilled Lime Chicken With Black Bean Sauce - cooking recipe

Ingredients
    4 (4 oz.) skinned, boned chicken breast halves
    1/4 c. lime juice
    2 Tbsp. vegetable oil
    1/2 tsp. ground red pepper
    6 cloves garlic, minced
    1/2 c. chopped red pepper
    1 Tbsp. chopped red onion
    1 c. canned black beans, drained and rinsed
    1/2 c. orange juice
    2 Tbsp. balsamic vinegar
    1/4 tsp. salt
    1/8 tsp. fresh ground pepper
    1 clove garlic, minced
Preparation
    Place chicken in shallow dish.
    Combine lime juice and next 3 ingredients; divide mixture in half.
    Cover and refrigerate half and pour remaining half over chicken, turning to coat.
    Cover chicken and refrigerate at least 1 hour.
    Combine red pepper and onion in a 9-inch pie plate.
    Cover with wax paper.
    Microwave 1 minute on High and set aside.
    Position knife blades in food processor bowl.
    Add black beans and remaining ingredients. Process 1 minute or until smooth.
    Pour bean mixture into saucepan and cook over medium heat until hot.
    Keep warm.
    Uncover chicken and drain.
    Cook chicken without grill lid over medium hot coals about 5 minutes each side.
    Baste with refrigerated marinade. Serve chicken with black bean sauce and red pepper sauce.
