Ingredients

2 (1 lb.) cans beets
1 c. brown sugar
1/2 c. vinegar
1 heaping Tbsp. pickling spice
2 Tbsp. cornstarch
Preparation

Drain liquid from beets into a large pot.
Mix in sugar, vinegar and spices.
Bring to a boil and simmer 10 minutes. Strain liquid and discard spices.
Bring liquid to a boil. Dissolve cornstarch in cold water.
Stir slowly into liquid until slightly thickened.
Add beets and simmer to flavor.
Serve hot as a side dish.
