Ingredients

1 pkg. vanilla wafers
1 pkg. Keebler grasshopper cookies or Girl Scout thin mints
yellow frosting
red frosting
coconut dyed green (just a couple drops of food coloring)
sesame seed
egg whites
shoestring potatoes
Preparation

Lay vanilla wafer, rounded side down; drop small amount of yellow frosting on top.
Gently push a mint cookie on top.
Put red frosting on top of mint cookie; add some green coconut.
Take second vanilla wafer and put small amount of frosting inside and gently press onto coconut.
Brush top with egg whites and sprinkle with sesame seed.
Put in cupcake paper and add shoestring potatoes on the side.
