Quick And Easy Veggie Soup - cooking recipe

Ingredients
    1/2 lb. ground beef
    1 Tbsp. vegetable oil
    1 can tomato paste
    1 can Ro-Tel tomatoes with green chilies
    1 can mixed beans (pintos/Northern)
    1 can Veg-All
    2 large carrots, diced
    2 stalks celery, diced
    2 medium onions, diced
    3 medium potatoes, diced
    1 tsp. salt
    2 Tbsp. fresh parsley, chopped
    2 Tbsp. fresh basil leaves, chopped
    1 tsp. black pepper
    2 to 3 c. water
Preparation
    Place fresh vegetables in Dutch oven with vegetable oil and cook until they start to get light brown.
    Put ground beef in and brown.
    Immediately add all other ingredients and simmer for at least 30 minutes.
    Better if slow simmered for longer.
    Makes about 4 quarts of soup.
    Yummy!!
    Serve with corn bread.
