Mee Mom'S Irish Potato Candy - cooking recipe

Ingredients
    1 stick butter
    2 Tbsp. water (cold)
    1 Tbsp. vanilla
    1 lb. 10x sugar
    7 oz. shredded coconut
    cinnamon
Preparation
    Melt butter in top of a double boiler; add water and vanilla. Pour butter mixture over sugar and combine well with your hands. Work in coconut.
    Pinch off small pieces of mixture and shape into balls.
    Refrigerate for about 1 hour.
    Remove from refrigerator and roll each piece in cinnamon.
    Refrigerate again.
