Microwave Saucy Baked Eggs - cooking recipe
Ingredients

1/4 c. salsa
1 egg
1/4 tsp. olive oil
1 tsp. shredded Cheddar cheese
Preparation

Lightly spray bottom and sides of 6-ounce custard cup with Pam. Place salsa in bottom. Break egg on top of sauce.
Prick yolk twice with sharp knife. Sprinkle salt and pepper over yolk. Top with olive oil and cheese. Cover loosely with paper toweling. Microwave on 100% power for 1 1/2 minutes or until desired texture.
