Pecan Cake(Diabetic) - cooking recipe
Ingredients

1/2 c. butter
1 egg
1/2 c. Sugar Twin
1 tsp. vanilla extract
2 c. flour
2 tsp. soda
1/2 tsp. cinnamon
1/4 tsp. cloves
1 1/2 c. diabetic applesauce
1 c. coarsely chopped pecans
1 c. sliced dates
Preparation

Cream butter until light.
Combine egg, Sugar Twin and vanilla; beat until well blended.
Blend into butter.
Sift dry ingredients together; add to butter mixture.
Mix until well blended.
Stir in applesauce.
Beat with electric mixer for several minutes at high speed.
Blend in pecans and dates.
Turn into buttered loaf pan.
Bake in preheated 350\u00b0 oven for 1 hour, or until cake tests done.
Yields 6 servings.
