Blue Corn Pancakes - cooking recipe
Ingredients

1 c. blue or yellow cornmeal
1/2 c. flour (all-purpose)
1 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1 c. buttermilk
2 eggs, separated and whites whipped stiffly
1/4 c. plain yogurt
Preparation

Mix dry ingredients.
Stir buttermilk into egg yolks and yogurt.
Stir in melted butter and mix with dry ingredients.
Fold in beaten egg whites.
Fry in butter in 3-inch rounds.
Serve with 1 tablespoon honey pecan butter and warmed maple syrup.
Garnish with pecans.
