Chicken Stock - cooking recipe

Ingredients
    1 whole chicken
    2 qts. water
    1 carrot (coarsely chopped)
    1 celery stalk
    1 small onion (quartered)
    1 bay leaf
    1/4 tsp. dried basil
    6 whole peppercorns
    1/4 cup fresh parsley (chopped)
Preparation
    Cut up chicken.
    Add gibblets, if avalible.
    Combine all ingredients in a large soup kettle.
    Bring to a boil and simmer over low heat for 1 1/2 to 2 hours.
    Strain.
