Ingredients

3 eggs
1/2 c. packed light brown sugar
1 c. cream of coconut
1 c. pecan pieces or halves
2 Tbsp. melted butter or margarine
1/2 c. coconut
1 tsp. vinegar
1 tsp. vanilla
1 unbaked pie shell (9-inch)
whipped cream
chopped pecans
Preparation

Preheat oven to 350\u00b0.
Beat eggs in medium bowl.
Add brown sugar; stir until brown sugar dissolves.
Add next 6 ingredients; mix well.
Spoon into pie shell.
Bake for 30 to 35 minutes or until center is puffed.
Cool.
Chill until serving time.
Serve with whipped cream and chopped pecans.
