Diabetic Fruit Cake - cooking recipe
Ingredients

1/2 c. raisins
5 dates or prunes, finely chopped
5 figs, chopped
15 dried apricot halves, finely chopped
1 orange rind, grated
1/2 c. oleo
2 eggs
1 1/4 c. plain flour
1/2 tsp. soda
1 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
1 tsp. vanilla
Preparation

Combine raisins, dates or prunes, figs, apricots and orange rind in small bowl.
Set aside.
Cream oleo until light and fluffy.
Add eggs and vanilla.
Stir in flour, soda, baking powder and spices.
Pour in fruit mixture and meat until blended.
Bake at 325\u00b0 for 45 to 55 minutes.
Cool and store in upright container for 3 days.
Freezes well.
