Southwestern Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. boneless, skinless chicken breast halves, cut into cubes
    1 large onion, chopped
    1 (15 1/2 oz.) can kidney beans, drained
    1 (12 oz.) jar chunky salsa
    1 (7 oz.) can corn, drained
    1/2 c. chicken broth
    1 1/2 c. Minute rice, uncooked
    1/2 c. sour cream
Preparation
    Heat oil in large skillet on medium-high heat.
    Add chicken and onion.
    Cook and stir until chicken is cooked through.
    Stir in beans, salsa, corn and broth; bring to boil.
    Stir in rice. Remove from heat; cover.
    Let stand 5 minutes.
    Stir in sour cream.
    Garnish as desired.
    Makes 4 to 6 servings.
