Zucchini Bread - cooking recipe

Ingredients
    1 1/2 cup sugar
    3 med. zucchini, grated well (2 cups)
    3 eggs
    2 tsp. vanilla
    2 cups sifted flour
    1 cup oil
    1/4 tsp. baking powder
    2 tsp. baking soda
    3 tsp. ground cinnamon
    1 tsp. salt
    1 cup raisins or chopped walnuts
Preparation
    Beat eggs lightly in a large bowl.
    Stir in oil, sugar, zucchini and vanilla.
    Sift flour, baking powder, baking soda, cinnamon and salt onto wax paper.
    Stir into egg mix until well blended; stir in raisins and nuts.
    Spoon batter into 2 well-greased 8 x 5 x 3 inch loaf pans.
    Bake in 375 oven for 1 hour.
    Cool on rack for 10 minutes.
    Remove.
    Cool completely.
