Baked Creole Eggplant - cooking recipe
Ingredients

2 eggplant, diced
1 onion, chopped
1 c. raw peeled, deveined shrimp, chopped
1 to 2 ribs celery, chopped
1/2 c. butter
Preparation

Boil eggplant until soft.
Saute onion, shrimp and celery in butter.
Combine with eggplant.
Pour into casserole and sprinkle with bread crumbs.
Bake for 30 minutes at 350\u00b0.
