Light Chicken Spaghetti - cooking recipe

Ingredients
    vegetable cooking spray
    1/4 c. plus 2 Tbsp. diced onion
    1/2 c. diced celery
    1/4 c. diced green pepper
    1 clove garlic, minced
    1 (16 oz.) can tomatoes (undrained), chopped
    1/4 tsp. paprika
    1/4 tsp. chili powder
    1/4 tsp. ground cumin
    1/4 tsp. black pepper
    1/8 tsp. red pepper
    8 oz. skinned and boned uncooked chicken breast, cut into bite-size pieces
    hot cooked spaghetti
Preparation
    Coat a large skillet with cooking spray; place over medium-high heat until hot.
    Add diced onion, celery, green pepper and minced garlic; saute until tender.
    Stir in tomatoes, paprika, chili powder, cumin, pepper and red pepper.
    Cover, reduce heat and simmer 15 minutes.
    Add chicken, cover and simmer 15 minutes. Serve chicken over hot spaghetti.
    Yield: 2 servings.
