Spanish Eggplant And Rice - cooking recipe

Ingredients
    3 Tbsp. butter or margarine
    3 c. eggplant, sliced
    1 large onion
    2 c. peeled and chopped tomatoes
    1 tsp. salt
    1/2 tsp. black pepper
    2 Tbsp. light brown sugar
    2 c. cooked long grain rice
    1/2 tsp. garlic
Preparation
    Cook onion and eggplant in butter until tender.
    Add tomatoes and cook another 10 minutes.
    Add cooked rice.
    Then add remaining seasoning and cook another 10 to 15 minutes or desired consistency.
