Spanish Fried Rice - cooking recipe
Ingredients

1 1/2 c. uncooked long grain rice
1 Tbsp. shortening, melted
1 c. chopped tomato
1/4 c. chopped onion
1/4 c. chopped green pepper
3 c. canned diluted chicken broth
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. cumin seed
1/4 tsp. pepper
Preparation

Saute rice in shortening in a large saucepan over medium heat until rice is lightly browned.
Add tomato, onion and green pepper to rice mixture and saute until vegetables are tender.
Stir chicken broth, minced garlic, salt, cumin seed and pepper into vegetable mixture.
Bring to a boil; cover, reduce heat and simmer 25 minutes or until rice is tender and liquid is absorbed.
Serves 8 to 10.
