Ingredients

1 1/2 c. flour
1/2 c. sugar
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 c. thawed frozen strawberries (reserve 2 Tbsp. juice)
1/4 c. vegetable oil
1 large egg white, lightly beaten
1 oz. chopped pecans
1/2 c. light cream cheese
Preparation

Preheat oven to 350\u00b0.
Spray a 9 x 5-inch loaf pan.
Combine flour, sugar, baking soda, cinnamon and salt.
Make a well in center of flour mixture.
Pour strawberries, oil, egg white and pecans into well. Mix well.
Spoon batter into prepared pan.
Bake 45 to 50 minutes.
Cool completely on rack.
Combine cream cheese and reserved strawberry juice.
Cover and refrigerate.
